A Holiday Recipe the Whole Family can Enjoy!

There’s nothing like enjoying warm baked Christmas treats with friends and family during the holidays. But for some of us, gluten and dairy don’t usually favour digestive cheer!

So we came up with a recipe the entire family can enjoy! Check out our gluten free holiday cranberry nut bars!

3/4 cup of walnuts
1 cup of brown rice flour
1/2 cup of tapioca starch
1 teaspoon of gluten free baking powder
3/4 teaspoon of xanthem gum
1/4 teaspoon of salt
1/2 cup of butter or coconut oil
1/2 cup of brown sugar or 4 tablespoons of honey
2 large eggs
1/2 teaspoon of vanilla
1 cup of fresh cranberries
2 tablespoons of orange zest

1. Preheat oven to 350F, and grease a 9×5 inch pan.
2. Combine rice flour, tapioca starch, baking powder, xanthem gum and salt.
3. Combine butter and sugar in a separate bowl using an electric mixer on low. Beat until fluffy. Add one egg at a time until well combined. Add vanilla.
4. Slowly add the dry ingredients until well combined. Fold cranberries,walnuts and orange zest into the dough.
5. Transfer the dough to your pan and bake for 20-25 minutes.
