Almost Shortbread Cookies


Who doesn’t love cookies?

Try this tasty shortbread cookie recipe!  With no added sugar but full of yummy goodness, these cookies are sure to impress!  


  • 1 cup all-purpose flour
  • 3 1/2 teaspoons Stevia
  • 1 tablespoon cornstarch
  • Pinch of salt
  • 8 tablespoons cold butter cut into pieces
  • 1/2 teaspoon vanilla Extracts 


  1. Combine flour, Stevia, Cornstarch in salt in a medium bowl. Cut in cold butter and blend pastry until it crumble 
  2. Sprinkle vanilla  extract over mixture and stir in; mix with hands briefly until dough begins to hold together. Add water if this doesnt form a dough
  3. Pat dough evenly in bottom of greased 8-inch round cake pan.
  4. Lightly cut dough into 12 wedges with sharp knife, cutting about halfway through dough.
  5. Pierce each wedge 2 to 3 times with tines of fork; press almond into each wedge.
  6. Bake in preheated 325*F (160*C) oven until shortbread is lightly browned 25 to 30 minutes
  7. Cool on wire rack; cut into wedges while warm.
